Shish Kabob Grapes

For my kids Birthday Party I decided to make Shish Kabob Grapes as one of the appetizers. There were only 4 left from this plate after the party was done that totaled eight kids. These were simple, sweet and easy to make and gave a great fun colorful presentation for my children’s birthday party.

Ingredients:

Green Grapes

Purple Grapes

XL toothpicks

Directions: Rinse the grapes first. Then add green and purple grapes to shish kabob sticks. Add to plate and serve.

Thai Beef Salad Recipe

This is an all time favorite. I grew up with this dish. My Mom had a friend  from Thailand and she owned her own Thai restaurant where we lived when I was little and we would go visit her and have this Thai beef Salad dish along with some other great Thai dishes to include Tom Yum and Tom Kha Gai soup. Since then, I learned how to make this dish and I have served this Thai Beef Salad up for friends and family members.  And Everyone who has had tried it, has loved it!

So, last night for dinner I decided to make this salad recipe of mine for my family and let me say it was all gone by lunch the next day between two grown adults and two children.  We all had seconds and of course we all packed the salad for lunch. It was beyond delicious.  The meat can also be cooked three different ways Grilled, Broiled or on the pan. Make sure to marinate the meat if you decide to Grill or Broil this dish with a little bit of Soy Sauce and minced garlic and then Stir Fry it for 5-10 minutes with all the ingredients below.  Either way it is cooked, I promise it will be delicious. Meat

Ingredients

4 steaks chopped

1 cup chopped Onion

1 oz Cilantro

2 cup Sliced Onion

3 tbsp Soy Sauce or low sodium Soy Sauce

1 tsp Chili Red Pepper

1 tsp Minced Garlic

1 tsp. Lime Juice

Directions: Prepare meat and all other ingredients. Add 1/2 tbsp. Olive to pan then add meat and 2 tbsp. Soy Sauce with Onion and minced garlic. Stir fry on high heat for 5-10 minutes. Add red chili peppers one more tablespoon of soy sauce and squeeze fresh lime juice over meat and add cilantro and continue to stir fry on high heat for another 5 minutes or until meat is cooked. Then prepare Salad. Let meat cool all the way down before adding to salad.

Salad

Ingredients

8 cups Green Leaf Lettuce

1 cup chopped Green Onion

2 cups sliced Tomatoe

2 cup sliced Cucumber

3-4 oz Cilantro chopped

Directions: Prepare all salad ingredients. Then add to salad bowl and mix all ingredients. Then prepare sauce.

Sauce

Ingredients

2 tbsp Fish Suace

1 tbsp Soy Sauce

2 1/2 cup water

1/2 tbsp Garlic minced

1 tsp. Chili Red Peppers

4 oz. Lime juice

1 tbsp. Siracha Hot Chili Sauce

Directions: Add all ingredients to mixing bowl. Mix sauce. Any leftover over meat juice from meat pan go ahead and drain into sauce. Mix. Then pour about 1 cup over the salad and 1/2 cup over the meat in pan. The Add meat to salad and Serve.

Roast Beef

Ingredients

1 Roast beef (3.29 net. wt.)

1 2/2-2 tbsp. Soy Sauce

1/2-1 tbsp. Black Pepper

2 tbsp Garlic Cloves chopped

1/2 cup Garlic clove whole

1 Tbsp. Olive Oil

4 cups Celery chopped

2 cups Carrots chopped

1 1/2 cup Walla Walla Onion chopped

1/2 cup Lemon Grass

2 oz. Basil

1/3 cup Cilantro

4 cups Potato chopped

14.5 oz. Organic Stewed Tomatoes

Prep Time: 15 minutes Cook Time: 2 hour 45 minutes

Serving Size: 8-10

White Rice with White Vinegar on top

For extra taste: Feta Cheese to dish prior to serving

Directions: Prepare Roast. Cut about 1-2 inches deep in the middle of roast. Add 2 tbsp. chopped garlic cloves. Then lightly pour soy sauce about 1-2 tbsp. all over Roast. Rub it in with a little black pepper. Then enclose garlic in roast with cooking bands.

Add 1 tbsp. Olive Oil to pot. Turn heat to high. Add Roast to pot. Sear the roast on each side 1-2 minutes each until nice and braised.

Add chopped 4 cups celery, 1 1/2 cups onion, 2 cups carrots and 1/2 cup whole garlic cloves to pot. Cook in pot for 3-5 minutes on high heat. frequently stirring the produce.

 Then add 4 cups water. Bring water to a boil. While water is heating back up prepare Lemon grass. Cut lemon Grass and add about 1/2 cup to pot.

Then add 1 1/2 tbsp Soy Sauce and 1 can (14.5 oz) Organic Stewed tomatoes, 2oz. Basil leaf, 1/3 cup Cilantro and Lemon Grass to pot. Mix all ingredients.

Once pot is fully boiling cover with lid and simmer on medium low heat for 2 hours and 30 minutes.

Uncover pot after 2 hours and 30 minutes. Let cool for 10-15 minutes.

Then Add Roast to baking Pan to cut and Serve.

Romaine Salad & Mayovin dressing

Step 1: 

Romaine Salad 

Ingredients

Romaine Lettuce

1 Carrot Stick

1/2 cup onion (sliced)

Directions: Cut Romaine lettuce and add to salad bowl. Shred 1 carrot in Salad bowl and add 1/2 cup thinly sliced onion and mix.

Step 2: 

Mayovin Dressing

Ingredients

Mayonnaise

Balsamic vinegar

dash Black Pepper

Add tbsp Mayonnaise and Balsamic Vinegar to mixing bowl.  Add a dash of Black Pepper and mix. Pour Sauce over Salad. Mix and serve.
